Please NOTE: Cakes and icing will be brought from home; students to decorate their cakes in class. All supplies, equipment, ingredients to be furnished by students unless stated otherwise on class handouts each week. Instructor will have some cake decorating supplies available to students for a fee.This course combines lectures, demonstrations and hands-on participation. Students will learn tricks of the trade and troubleshooting tips to ensure fabulously decorated cakes. We will start with “Good Foundation to Decorating Cakes”: Tools for baking and decorating cakes, baking basics, leveling, torting and filling cakes, filling and icing recipes, icing a cake (smooth and textured), icing colors, using pastry bags, couplers, tips and their usage (demonstration). Emphasis will be placed on piping techniques: Piped borders, writing, simple and advanced flowers (rose), side garlands, cornelli lace, embellished borders, linework, basketweave, and flowers with foliage to decorate cakes for all occasions. Upon completion of this course students will have gained knowledge and skills to continue taking workshops and intermediate-advance cake classes. First class is a lecture and demonstration, just bring pen or pencil.
